Cakes
are something I have been always afraid of! But when I saw the famous Donna Hay
baking a cake in a cookery show on TV, it looked just simple, delicious and
easy to prepare. This recipe is one of those: you just have to get the
measurements right, pop all the ingredients in, manually mix the cake batter
and let it bake. Yes, people it’s that simple! If you don’t believe me, try it,
and experience the joy of baking, because it was never this simple. Happy

Required
Ingredients:
A)
For
the cake:
1 tbsp lemon rind
1 cup yogurt
¾ cup vegetable oil
2 eggs
2 tbsp lemon juice
1 ¾ cups caster sugar
2 cups all-purpose flour
1 tsp salt
3 tsp baking powder
B)
For
the glazing:
¾ cup granulated sugar
¼ cup lemon juice

Instructions:
A)
For
the cake:
1. Preheat
the oven at 170 degree-celsius. Grease the cake tin with some oil.
2. In
a small bowl, sift all the dry ingredients: salt, flour and baking powder and
keep it aside.
3. In
a large bowl, add in oil, eggs, lemon juice, yogurt and sugar. Whisk them to
mix properly. Now add all the dry
ingredients in it and mix until smooth.
4. Now,
place the batter on the cake tin and bake it for 30 to 35 minute or until fully
baked.
B)
For
the glazing:
1. Mix
the sugar and lemon juice. Don’t over mix, as you don’t want the granules of
sugar completely dissolved.
2. Once,
your cake is out of the oven, flip it on the serving plate after 3 to 4
minutes, and top the glazing while the cake is still HOT!
3. Your
cake is ready. Enjoy!
