A creamy fettuccine without cream in it.. is that even possible and that too with no change in taste? Yes, it is possible and we are going to make a creamy white sauce substituting cream with some of noodles stock.Sounds crazy right? Try it you will love your pasta. Required Ingredients:
1/4 cup of Green peas, blanched
1/4 cup of sweet corn kernels, boiled
About 3 cups of fettuccine pasta, not boiled
1 and 1/2 cup milk
3 tbsp all-purpose flour
3 tbsp oil + as required to boil noodles
Salt, as required
1 tsp or as required black pepper powder
1 tsp or as required sugar
1 cup noodles stock (the salted water in which you have boiled your noodles)
2 tbsp cheddar cheese
2 tbsp lemon juice
6 tbsp Coriander leaves (chopped)

1 cup noodles stock (the salted water in which you have boiled your noodles)

Required Instructions:
- Boil your pasta in boiling water, with some oil and salt in it. After your pasta is boiled, keep one cup of the stock for further use and drain the rest. Rinse your boiled pasta with cold water and keep aside for further use.
- In a pan, heat oil. Add in the blanched peas and sweet corn. After tossing them for a while, dust in the flour and keep mixing. Do not let lumps to form. Now add in the milk and keep stirring. Remember when you add in the milk and flour, mix it on medium heat. Now, keep stirring and let the milk reduce as well to infuse the flavors of peas and corns. After a while, add in the noodles stock, and reduce it further. Add in the cheese and black pepper powder. Keep stirring. And let it reduce until you feel that the sauce is thick enough to coat with the fettucine you boiled. At that time, add in lemon juice and sugar to balance the taste. If required, add in salt, as your noodles stock also contains some amount of salt.
- Now add in the coriander leaves and mix. Add in the noodles in the hot sauce, toss for a while, and turn off the heat.
- Serve hot and enjoy your creamy pasta. You can serve with grated parmesan cheese on top, if you want!
