Bhuna Khichuri (from the Basics)

Khichuri has been one of those traditional food which had been always our favorite! And when we talk about 'bhuna khichuri', the temptation of this having authentic food just have no limits. Preparing this food at home is very easy, all you need to do is follow the basic steps and relish the comforts of your homemade bhuna khichuri at any time of the day! This food goes very well with whole-fried cauliflower, sweet and sour bringal or eggplants, and chicken curry.  Try making it at home and enjoy! 






REQUIRED INGREDIENTS:

1 cup Moong daal
5 to 6 potatoes, each cut in medium cubes
1 cup onions, finely chopped
4 to 5 green chillies cut in halves
3/4 tsp Turmeric powder
2 cup uncooked rice
Oil as required to deep fry
1 bay leaf
2 whole cloves (lobongo)
1/2 cup butter oil
2 tsp ginger (grated or finely chopped)
3 pcs of 2 cm cinnamon
2 boiled eggs, each cut in quarters
5 cup or more hot boiling water
Salt as required

REQUIRED INSTRUCTIONS:

  1. Coat potatoes with some salt and deep fry them. Take them out when they start getting golden brown in color, don't deep fry them too much as you will cooking them later as well!
  2. Deep fry onions as well, and fry it until it is in crispy golden-brown in color. ]
  3. In a pan, add water and let it boil. Remember the boiling water must be at least 5 cups.
  4. In a dry pan, dry roast the dal, and  then wash them keep it aside.
  5. Wash rice in separate bowl as well.
  6. Mix the rice and dal together.
  7. In a small bowl, add 2 tbsp water to the turmeric powder and mix.  
  8. In a large pan, heat some butter oil. Add in ginger, bay leaf, whole clove, cinnamon and stir. Ad dthe tumeric mixture and cook for a while. Try not to burn it! Add in the rice and the dal and cook for about 2 to 3 minutes or until it starts releasing its flavors.
  9. Now, add in the potatoes and stir as well. Add in the boiling water  and salt and let it cook at medium heat  by closing the lid for 20 to 25 minutes. At times do have look as more water can be required. If not cooked, add some more water to it.
  10. Once the rice is cooked, add in the green chillies, and fried onions and keep in heat for a while until it is mixed well. Serve it in your serving dish and garnish with boiled eggs on top.
  11. Enjoy!
