Required ingredients:

4 big or 6 small ripe bananas
150 grams butter, softened, but not melted
1 and 1/2 cup of caster sugar
2 and 1/2 cup of all purpose flour
1 tsp salt
3/4 tsp baking soda
3/4 tsp baking powder
1 tbsp white vinegar
1/2 cup milk
1 and 1/2 tsp of vanilla essence or banana essence
2 eggs
Icing sugar or powdered sugar (caster sugar grinded into sugar powder), for dusting

Required instructions:

A) Preparation:

  1. Using a fork, mash the bananas coarsely and keep it aside.
  2. In a different bowl, break two eggs, no need to beat as we will add the egg one by one to the mixture. Add in the vanilla or banana essence.
  3. Measure the sugar, and add it to the mixing bowl where you will be creaming butter and sugar together. Add butter in it as well.
  4. Sift all the dry ingredients in the different bowl: flour, baking powder, baking soda, and salt.
  5. Mix white vinegar and milk in a small bowl. Don't worry if you see a curdle, because that is what you will be wanting to prepare your buttermilk.
  6. Preheat oven at 180 degree celsius and grease an 8-inch  cake tin.
B) Batter and bake:
  1. Cream butter and sugar together.
  2. Now, add the mashed bananas and beat. Remember to beat at high speed.
  3. Add in one egg mixture to it, and beat. Add 1 tbsp of the dry ingredient mixture to it and beat. Once it is beaten, add the rest egg mixture and beat properly. Add another tablespoon of dry ingredients and beat.
  4. Add the rest dry ingredients and beat properly. Remember to beat at medium-high speed.
  5. Now add in the milk and vinegar mixture and beat at high speed.
  6. Beat until it turns to a nice smooth not so thick or not so runny textured cake batter.
  7. Pour it over the greased cake tin and bake for about 30 minutes or until it is fully baked.
  8. Once the cake is baked, let it cool at room temperature, and dust with some icing sugar on top when you serve. Keep it simple!
HAPPY FEASTS TO YOU ALL!
