Restaurant-style Buffalo Wings

Who doesn't love 'buffalo wings'? The delicious hot sauce coated all over the chicken wings makes you just lick your fingers after you are done having  it, and the recipe is so great you can't just eat just one! Maybe, it has a "no other side dish required" tag in it. Make yourself a bowl of these and enjoy! However, you can also try it with fried rice, where you can serve this dish as an accompaniment to your rice. This recipe is from a cookery show, but I can't remember which. But, I remember my dad's expression after taking the first bite saying "Did you really make these? Its' exactly like the one we had in  the restaurant the other day."Try this guys, you will love it, just like my family does! Happy Feasts to you all!

Required Ingredients:

A) For Marination:

1/2 kg chicken wings
1/2 tsp salt
1/2 tsp black pepper powder

B) For Batter:

1 egg
1/2 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper powder
1 tbsp oil
1 tbsp cornflour
chilled water as required to make the batter

C) For the sauce:

1/4 cup oil
1 tbsp Garlic (chopped)
2 tbsp Tomato sauce
2 tbsp Chili Sauce
1 tbsp Oyster Sauce
1 tbsp Worcestershire sauce
1 cup chicken stock
1 tbsp cornflour
a pinch orange red color (optional)
2 tbsp honey

D) To deep Fry and garnish:

Oil to deep fry
Coriander leaves to garnish

Required Instructions:
  1. Marinate the washed and cleaned chicken wings with salt and black pepper powder. Keep it aside for about 10 minutes or so.
  2. In the mean time, mix all the ingredients of batter together in a large bowl. Keep mixing it until there's a thick and smooth mixture. If your mixture is runny, you have added too much water in it, so add equal amounts of cornflour and flour to fix you batter. The consistency of the batter is not too thick not too runny, somewhere in between i.e. enough to coat the chicken wings.
  3. In a wok, heat some oil to deep fry. Let it heat while you start preparing for the sauce.
  4. In a small bowl, add tomato sauce, chilli sauce, oyster sauce, Worcestershire sauce, chicken stock, cornflour, honey, orange-red color and mix them well.
  5. At first deep fry the wings coated with the batter. If required deep fry them in batches. Deep fry then in medium heat, and keep them aside for further use until all the wings are deep fried.
  6. After all the wings are fried, we make the sauce and then we will toss it with the chicken wings and serve. So, to make the sauce, we take a pan, put some oil in it. Add garlic and stir it until its soft and starts releasing its flavors. Now, we add the mixture we kept aside in the small bowl in no.4 step , keep stirring it, as it has cornflour in it. Wait for it to boil and thicken into a not so runny sauce. Turn off the heat.
  7. Now, add the chicken wings to the hot sauce. Toss it lighly.
  8. Serve hot in bowl. Garnish with coriander leaves if you wish!
HAPPY FEASTS TO YOU ALL! :D
