Coriander Chutney Raita

 Guys, making a "raita" is simple: just mix the ingredients, refrigerate, and serve as a accompaniment with your dish you are serving. The beautiful part of raita is it's  freshness, carrying a "just made and refrigerated" sign! However, a good balance of taste needs to be maintained throughout, and to do that, you have to keep tasting and make the measurements as per your taste. The recipe we will be sharing today is a raita combined with none other than a coriander chutney. Make sure you use fresh yogurt, fresh coriander and fresh garlic for a better taste. You can enjoy it with a hot paratha, naan or enjoy it as quick evening snack- after all , it is healthy and good for diet! Happy Feasts to you all!


Required Ingredients:

Yogurt: 2 and 1/2 cup (FRESH)
Garlic: 2 cloves (FRESH)
Coriander Leaves: 1/4 cup, chopped (FRESH)
Salt: as required (about 1/4 tsp in the  mortar, add later if required after tasting the final product)
Green chillies: 5, each halved (FRESH)
Chaat Masala: 1 and 1/4 tsp or more
Red chilli powder: 2 tsp or more
Cumin powder: 1 tsp or more
Sugar: if required to balance the taste

Required Instructions:
  1. In a mortar, grind coriander, green chillies, garlic, salt together.
  2. With a hand beater (not electric) beat the yogurt into a smooth silky textured yogurt. Add in the grind-ed ingredients  into the yogurt and hand beat them manually. Now, add the chaat masala, red chilli powder, cumin powder and sugar and mix. Make alterations as per your taste as required, but don't spoil the white color. The color is it's beauty!
  3. Pour your raita into the serving bowl, once it is ready. Garnish with chaat masala, cumin powder and red chilli powder on the top with coriander leaves. Refrigerate it for at least an hour and half  and serve cold!
